Organic Farm Info

Cafe Del Macizo is a collective of farmers that joined together in 2003 along the countryside municipality of Planadas, in the state of Tolima. The group of 59 lifetime growers share decades of knowledge and resources to produce high-quality coffee. The beautiful mountains of the Cordillera Central shape the lush landscape in which they grow their coffee.

How is it Processed?

Washed & Sun Dried processing:

  1. Ripe coffee cherries are picked.
  2. Pulp is removed from cherries.
  3. Beans are briefly fermented in a water tank to remove the mucilage, or sticky layer, that surrounds the beans.
  4. Beans are washed in clean water.
  5. Dried on drying racks in the sunshine.
