Located in northern Peru in the Amazonian Andes, The Asociacion de Productores Cafetaleros Juan Marco El Palto (JUMARP), affectionately known as "El Palto," is a cooperative with 189 members. Among them, 40 are women actively involved in cultivating approximately 550 hectares of organic and Fair Trade Certified coffee. Their mission is focused on increasing production and profitability in the realm of specialty coffee to enhance the income of each member's family, creating a sustainable and prosperous future for all. Special varieties of beans include Typica, Castillo, Bourbon, and Catimor. All certified organic & fair trade.

Swiss Water process:

1. Green coffee beans are soaked in water. This creates a green coffee extract (GCE) that contains all of the soluble solids in coffee beans, except for caffeine.
2. The GCE is passed through a carbon filter. The caffeine in the GCE is absorbed by the carbon, while the other soluble solids pass through the filter.
3. The decaffeinated GCE is returned to the green coffee beans. This process is repeated several times until the desired level of caffeine removal is achieved.
4. The green coffee beans are dried. The decaffeinated beans are then roasted and packaged.
